Apple Mango Slaw

        This delicious and healthy apple mango slaw is a great cold dish that will go well as a side with a variety of proteins and salads. Allowing the slaw to marinate under refrigeration for several hours allows for better absorption and flavor blending of all the ingredients. 

Ingredients:

  • ½ head of cabbage shredded
  • 1 ea red bell pepper seeded and julienne cut
  • 2 ea red apples cored and julienne cut
  • 1 ea whole mango peeled cored and julienne cut
  • 1 tbsp of grated ginger
  • 1 cup of apple juice
  • 1 ea lime juiced
  • ⅔ cups of rice wine vinegar
  • ½ tsp of salt
  • ¼ tsp of ground white pepper

Step 1: In a large bowl combine ½ head of cabbage shredded, 1 ea red bell pepper seeded and julienne cut, 2 ea red apples cored and julienne cut, 1 ea whole mango peeled cored and julienne cut, 1 tbsp of grated ginger, 1 cup of apple juice, 1 ea lime juiced, ⅔ cups of rice wine vinegar, ½ tsp of salt, and ¼ tsp of ground white pepper. Mix all the ingredients together until everything is fully blended. Refrigerate for at least one hour before serving to allow the flavors to fully blend.
