Bacon, Tomato, and Cottage Cheese Muffins
Ingredients:
- ½ cup of cottage cheese
- 2 whole eggs
- ½ cup of all purpose flour
- ½ tsp of baking powder
- ½ tsp of salt
- ⅛ tsp of ground white pepper
- 2 slices of cooked and chopped bacon
- ¼ cup of chopped tomatoes
- ¼ cup of Mexican blend cheese
Yield: 4 standard muffins or 12 mini muffins
Step 1: In a mixing bowl combine ½ cup of cottage cheese, 2 whole eggs, ½ tsp of salt, ⅛ tsp of ground white pepper, and ¼ cup of Mexican blend cheese. Thoroughly mix the ingredients together.
Step 2: Mix in ½ cup of all purpose flour and ½ tsp of baking powder.
Step 3: Once the flour is fully incorporated, add and fold in 2 slices of cooked and chopped bacon and ¼ cup of chopped tomatoes.
Step 4: Pan spray four cups in a standard muffin pan or 12 cups in a mini muffin pan. Fill the cups with the muffin batter and bake in a preheated 400ºF oven for 25 minutes or until the muffins are fully cooked. Note: mini muffins will cook faster.
Step 5: Remove the muffins from the oven and allow them to rest for a bit before removing them from the pan.
