Dijon Herb Roasted Cornish Game Hen

Ingredients:

Step 1: Preheat an oven to 400ºF.

Step 2: Remove the leaves from 1 sprig of rosemary and 1 sprig of thyme . Chop the rosemary and thyme leaves and combine the herbs in a small bowl with 1 oz of Dijon Mustard, a pinch of salt, and a pinch of pepper. Mix all the ingredients together..

Step 3: Add 1 Cornish game hen breast side up to an oven safe 9 inch casserole dish. Using a pastry brush coat the cornish game hen with the Dijon mustard herb mix.

Step 4: Evenly place 6 oz of baby red potatoes, 6 ea small peeled white boiler onions, 1 oz of whole garlic cloves, 1 ea large carrot peeled and chopped, 2 sprigs of thyme, and 2 sprigs of rosemary around the Cornish game hen.

Step 5: Pour 6 oz of white wine over the potatoes and vegetables. Season the potatoes and the vegetables with salt and black pepper.

Step 6: Cook the Cornish game hen, vegetables, and the potatoes for 1 hour at 400ºF. When the Cornish hen is fully cooked remove it from the oven and serve. Bon Appetit!
