Oatmeal Coconut Banana Bread

Ingredient:

An extra ¼ of a cup of all purpose flour will be needed to coat the pan.

Yields 1 – 9×4 inch bread pan 

Step 1: Preheat your oven to 325°F

Step 2: In a mixer with a paddle attachment combine 1 ½ sticks of soft butter and 1 cup of brown sugar. Cream the ingredients (Cream refers to whipping the ingredients until they are creamy and smooth.) Note: If you don’t own an electric mixer you can use a mixing bowl, a durable beater or whisk, and a good amount of arm strength.

Step 3: Beat in 3 whole eggs, 4 overripe bananas, 1 oz of milk, ¼ tsp vanilla extract, 1 ½ tsp of baking powder, 1 ½ tsp of baking soda, 1 ½ tsp of cinnamon, 1 tsp of powdered almond butter (optional), 1 tsp of salt, 1 cup of all purpose flour, 1 cup of oats, and ¾ of a cup of unsweetened coconut flakes. Mix all the ingredients until the batter is smooth.

Step 4: Grease or pan spray a 9×5 inch bread pan. Add roughly ¼ of a cup of flour to the greased pan. Turn the pan allowing the flour to evenly coat every area of the pan. If you need more flour to completely coat the pan you can add more. Once all sides of the pan are coated, shake off any excess flour.

Step 5: Fill the bread pan with the batter. Note: If you lightly tap the bottom of the pan on a hard surface it helps to evenly distribute the batter across the pan. I demonstrate this process in the video below right after I pour the batter into the pan.

Step 6: Place the bread pan into the fully preheated oven and bake for 1 ½ hours until the bread is fully cooked. You can test if the bread is fully cooked by inserting a toothpick through the top of the bread. If the toothpick comes out dry and not coated with wet batter it is cooked.

Step 7: Once the bread is fully cooked remove it from the oven and allow it to rest for at least 30 minutes.

Step 8: Carefully remove the bread from the pan, slice, and serve. Bon Apetit!
