SWEET POTATO MUFFINS
INGREDIENTS:
- ½ lb of peeled and chopped sweet potatoes
- 1 cup of all purpose flour
- 2 tsp baking powder
- 1 pinch of salt
- 2 whole eggs
- ¼ cup of vegetable oil
- 1 tbsp of orange juice
- ⅛ cup organic honey
- ⅛ cup brown sugar
Yields 6 large or 12 small muffins
Step 1: Preheat your oven to 400°F.
Step 2: In a pot on the stove add the sweet potatoes and add enough water to cover them completely. Bring the water to a boil and cook until the sweet potatoes are soft and easily broken apart with a fork or knife.
Step 3: Strain the cooked sweet potatoes and let cool for a couple of minutes.
Step 4: Place the potatoes into a mixing bowl and mash the potatoes. If you are using a mixer the paddle attachment works best but a whip will do just fine. Blend in the eggs, vegetable oil, orange juice, honey, and brown sugar. Sift and mix in the salt, baking powder, and flour. Combine the mixture until the batter is smooth in texture.
Step 5: Lightly oil a muffin pan or line the muffin pan with baking cups. With a spoon fill each cup ¾ of a way full.
Step 6: Place in the oven for 20 to 23 minutes. Remove from the oven and allow the muffins to cool for a few minutes before serving.
